Chicken Cacciatore
1/4 c. all purpose flour
1 tsp. salt
3/4 tsp. black pepper
3 lbs skinless chicken drumbsticks and thighs
2 Tbsp. olive oil
1 large onion
1/2 lb mushrooms slliced
1 c. chicken broth
1 c. Vino Noceto Rosato
2 medium tomatoes chopped
2 cloves garlic
1/4 tsp red pepper flakes
1/4 tsp oregano
1 Tbsp anchovy fillets, finely chopped
1 Tbsp parsley
In small bowl, mix flour 1/2 tsp each salt and pepper.
In large mixing bowl,
toss chicken pieces with oil. Add flour mixture from small bowl to mixing
bowl
and toss to coat chicken.
Place chicken in 6 qt or larger slow cooker. Add onion, mushrooms, broth,
wine,
tomatoes, garlic, red pepper, oregano and remaining salt and pepper.
Cook on low for 6 hours. Just before serving, stir in anchovy fillets
and parsley.
Serves 4
Serve with Noceto's Linstaedt Barbera.
