What Goes With Sangiovese?
A lot of your favorite foods! Enjoy Noceto Sangiovese with a variety of tomato-based dishes such as pizza, pasta, cioppino, gumbo, or chicken cacciatore.
The Noceto Sangiovese pairs well not only with pasta and pizza, but with a wide range of light meats from pork to lamb, and "meatier" fish, such as salmon. The Riserva Sangiovese stands up to fuller flavored dishes, and even beef.
Sangiovese Lamb Meatballs
1/3 lbs. ground lamb 1 cup finely chopped onion ½ cup bread crumbs (such as Asiago Pugliese) Cinnamon Garlic Rosemary (chopped fine or crushed with mortar and pestle) Basil Pepper Salt
Mix meat, onion, breadcrumbs and spices(amounts to suit your taste) together well. Form into balls.
Cook for 4 minutes covered in microwave on browning rack, or brown in fry pan on medium low heat. Save liquid from meatballs, if any, skim off fat.
SAUCE
1 cup red onion 1 stalk celery with leaves 1-cup mushroom pieces – used Portobello mushroom stems 2 TBS NOCETO OLIVE OIL Cinnamon Basil Garlic Pepper Rosemary – Chopped fine or crushed with mortar & pestle Salt Bay Leaf 1 large Japanese Eggplant – peeled, cut in half lengthwise and sliced thinly 1 can organic tomatoes, or fresh tomatoes 1 cup NOCETO SANGIOVESE
Chop onion, celery & mushroom fine in Cuisinart.
In Saucepan, warm NOCETO Olive Oil on low. Sauté onion, mushroom and celery on medium low until tender. Do not brown or dry.
Add seasonings, tomatoes and eggplant. Bring to a slow boil. Add wine and simmer slowly for flavors to blend. Approximately 15 minutes. Add meatballs and any liquid. Simmer until meatballs are warm. Cook your favorite pasta noodles al dente.
Serve with Fresh Parmesan, Salad and your favorite NOCETO Sangoivese. |
