2023 Sangiovese "Bianco"
Very limited.
This has to be one of the rarest wines in the world! Sangiovese is red; so, getting a world-class white wine from these grapes takes some skill. We hand-pick some of the best looking bunches into very shallow bins so our thin-skinned grapes don't burst and begin making rosé. We then gently press those gorgeous bunches and pull the pale free-run juice into barrels.
For more than a year, we let our Bianco develop and evolve. It is redolent of lime and mandarin zest, apricots, white nectarines, hazelnuts, green almonds, and even saffron. Our Bianco is crisp and acid-driven like a well-made Sauvignon Blanc, but with a bit more weight and richness.
Pairing suggestions: fish & chips, cucumber & feta, fresh pasta & sage, crab/avocado salad, or chicken kebabs. Maybe fish tacos with a tropical salsa made of pineapple and cilantro. How about the classic Roman pizza made from potatoes and rosemary? Stomach growling yet?
