What is Vin Santo?
“Vin Santo” means “Holy Wine” in Italian. Traditionally, each family made their own version to offer guests at the end of the meal, after coffee, and alongside biscotti.
Making Vin Santo takes time. The grapes that made this wine were estate grown. Harvested in 2015 and then dried for three months. This drying process is what sets Vin Santo apart from other “dessert wines” by allowing the flavors to become intensely concentrated. Once vinified, we aged the wine for three years before bottling to enhance complexity and maturity.
What does it taste like?
Vin Santo can range from lusciously sweet to bone-dry. Ours aims for the drier end of the spectrum with delicate yet gorgeous notes of hazelnut, caramel, toasted almonds, and tropical fruit.
How to serve it?
Vin Santo is intended to be served after dinner (and in Italy, after coffee) accompanied by biscotti. We suggest you also try it with candied nuts, aged cheeses, and on its own. A delicious savory pairing we’ve tried has been with roasted chicken!
